I discovered this pie recipe 4 years ago and insisted on making it for Thanksgiving. I convinced my family that there was room for it in our usual pie lineup and I’ve made it every year since. This year is the first Thanksgiving that I’m not heading home, and I’m sad to say that this pie will not be making an appearance at my Thanksgiving. A certain someone, who is the main consumer of the foods I make and who makes up 25% of the people I’ll be cooking dinner for this year, needs his pumpkin pie.

Yes, I know, it’s been forever. Even though I haven’t been posting recently, I’ve been in the kitchen and have been baking a lot. I’ve been working in a local bakery part-time and spending a good amount of time in my own kitchen too. The days here in Montana are getting increasingly dark and cold making for perfect baking weather.

Until the recent cold spell we’ve had, the zucchini in our garden had been going crazy. After plenty of grilled zucchini and zucchini salad, I decided it was time for some zucchini baking.

I made this salad two weeks in a row this summer. It is a perfect side dish for a BBQ and makes for a great lunch the next day.
