This week for Homemade Happy Hour I decided to go for something slightly Eastery and Easter means eggs. I absolutely love deviled eggs and when I saw this twist on the classic version, I had to make them.
The recipe calls for using some of the hard boiled yolks but I think they could be left out entirely. You really don’t taste them in the guacamole.
The hard boiled eggs whites basically give you another vessel, besides chips, for getting guacamole in your mouth. They make a great snack or appetizer.
You could totally make these with your favorite guacamole recipe too. Happy Thursday!
- 3 hard boiled eggs, cooled
- ½ avocado
- ½ teaspoon garlic powder
- ¼ teaspoon ground cumin
- 1 teaspoon lime juice
- paprika (for garnish)
Peel the cooled hard boiled eggs.Slice the eggs in half lengthwise and scoop out the yolks. Place the hard boiled yolk of one egg in a bowl and discard the rest.
Mash the egg yolk and avocado. Add the garlic powder, cumin, lime juice, salt and pepper and continue mashing until combined.
Fill the hard boiled egg white halves with guacamole and sprinkle with paprika.
