The idea of a raw kale salad was introduced to me by my sister who lives in Oakland, California. A few summers ago she worked in a vegan food cart in Portland, Oregon and raved about the raw kale salad they made there. She made me an incredible kale salad once when I visited her in California, and I fell in love. Somehow stiff kale turns into a tender salad when massaged with salt…who knew! Thanks, Clare.
When I saw kale at the grocery store today I was reminded of that salad and wanted to make one. Since my sister is the number one most impossible person to get a hold of…ever, I did my best to remember what she had told me and took a swing at my own raw kale salad. It turned out great!
Here’s what I did….tear kale from the large center stem, wash and dry it. Tear washed kale into smaller pieces and put them into a bowl. Add some salt. I added 1-2 teaspoons for the two stalks of kale I used. Now massage the kale and salt. You will notice the kale turning a deeper green and becoming more tender.
Once you have fully massaged the kale, you get to decide how you want to dress it up. I chose to put a squeeze of lemon, some parmesan cheese shavings and a couple cherry tomatoes. You could also mash up some avocado with the kale or add pine nuts or some sort of fruit (mangos or oranges maybe?) or anything else you can think of. I’d love to hear what other people are topping their raw kale salads with.

- Fresh lemon juice
- Shaved parmesan cheese
- Cherry tomatoes
- Tear kale off of its large center stem. Wash and dry kale. Tear kale into smaller pieces and put into a bowl.
- Sprinkle some salt over the kale (1-2 teaspoons for two kale stalks).
- Massage kale and salt with your hands.
- Toss with lemon juice and top with parmesan cheese shavings and cherry tomatoes.
